Job Responsibilities

  • To develop standard recipes for kitchen menus.
  • To prepare with the executive chef the annual operating budget.
  • To ensure highest possible quality and consistency.
  • To create new interesting items and change on a regular basic
  • To keep the walk-in-cooler / deep freezers neat and clean at all times.
  • To follow hygiene procedures very strictly.
  • To ensure staff discipline and productivity.
  • To ensure he is present during peak hours to check the products.
  • To discuss quality factors and defects of goods with the executive chef.
  • To control wastes and losses and keep them to a minimum.
  • To study the market needs and trends to be the market leader.
  • To ensure that the equipment are maintained to a good standard.
  • To prepare production chart and monitor them from time to time.
  • Supervise the kitchen in the preparation and presentation of all food items in accordance with the restaurant's SOPs and standardized menu guidelines.
