Chef should have experience in making south Indian dishes. Chef should be able to cook other homely dishes. Chefs having unique signature dish would be a plus point.
Chef should also be able to manage basic kitchen operations such as assessing of quantity of raw material/ingredients required, preparations for next day's food items, basic cleanliness and so on.
